Zucchini Bread Recipe Demonstration – Joyofbaking.com

Recipe here: https://www.joyofbaking.com/breakfast/ZucchiniBread.html The 1970s was a time when any baked good that contained a vegetable, and used oil instead of butter, was considered healthy. This trend made Zucchini Bread, as well as Carrot Cake, very popular. And true to its name, Zucchini Bread does contain grated zucchini, as well as grated apple. Both of these ingredients, along with oil, give the Zucchini Bread a wonderfully moist texture. Add to that chopped nuts, dried coconut, ground cinnamon and nutmeg, and it’s easy to see why this quick bread has stood the test of time. New Recipes every Thursday before noon Eastern time. Caramelised artichoke leaves with burrata and pesto recipe | Waste Not with Tom Hunt

The more fibrous artichoke leaves are sensational sauteed and steamed in wine until caramelised – a perfect pairing with soft cheese like mozzarella or burrata Artichokes are wondrous things, full of a phenolic compound called cynarin, which momentarily inhibits our ability to taste sweetness, leaving the tastebuds insensible to it, then acutely aware soon after. Maybe that’s why they make me salivate so uncontrollably: they’re good for the senses, and even digestion, if not for making friends. Many recipes use only the heart, requiring a messy operation that involves removing the stalk, top and leaves, and discarding them. Few recipes give any guidance on how to use these up, which is odd, seeing as they’re so delicious, if a bit …

Liam Charles’ apricot crumble sundae recipe | The Sweet Spot

Vanilla ice-cream topped with cookie crumble, sweet baked apricots, melted chocolate and cream It’s August, which means it’s my birthday month, and I’ll be celebrating with this super-simple sundae. There was a point in my life when I ate dried apricots all the time. When I finally tasted a fresh one, it blew my mind. It was so summery and fresh, which is why apricots are taking centre stage here (cooked with spices and balsamic vinegar). Pick up some of your favourite vanilla ice-cream, top it off with the best pistachio cookie crumble and some dark chocolate sauce, and you’ve got yourself a happy sundae. A homemade yoghurt recipe – with one strange ingredient | Waste Not

You can make your own live yoghurt from a pint of milk – and a few chilli stalks, thanks to the friendly bacteria they contain It wasn’t until I started cooking for 2,000 or more people over a weekend at music festivals that I realised how the tops and tails of vegetables we lop off stack up. Often they don’t need to be removed at all, like the tails on carrots, beans and turnips, which look more attractive left on. When the soily tops do need to be removed, a little extra precision can save a lot of food. One of my festival recipes is harissa. We used to cut the top off two kilos of chillies, wasting about 300g, …

Benefits of extended sous vide time?

My roommate made some short ribs from a recipe that called for a 48-hour cooking time at like 144F. They were indeed delicious, but I'm trying to figure out why that extended cooking time is necessary, and why it is better than a 12- or 24-hr cooking time, both of which the recipe writers said produced inferior results. (They actually said 72 hours produced the best results, but I guess 48-hrs is a compromise?). Is it just an extended maillard reaction, or is some other physical change happening? Or do you think a double-blinded testing would have yielded different results. FYI, the meat had been marinated, but I think went into the bag without any additional liquid. Also, the 24-hr …

Looking for gum free chickpea flour free homemade pasta recipe.

I used to make all kinds of pasta but have developed celiac and IBS. I can not tolerate xanthan gum or the fiber in chickpea flour and am eating only low-FODMAP foods without polysaccharides. The only pasta I have made since the diet restrictions is made of oat flour but it is a bit weird and gummy. Have any of you had success making pasta without gum or chickpea flour? What is your recipe please? Thank you. [I can eat animal gelatin… has anyone ever used that as a binder for pasta? Before I used to make soy flour and buckwheat flour pasta but it always required a bit of whole wheat flour for binder. I also used to make …

Thomasina Miers’ recipe for pork ribs with pineapple salsa | The Simple Fix

A pineapple salsa is an enticing way to cut through the richness of plump ribs It was in the beautiful, clay-baked walls of Casa Oaxaca’s restaurant in Mexico that I had a memorable salad of enormous heirloom tomatoes tossed with the juiciest, sweetest slices of pineapple, fresh lime, Mexican oregano and good olive oil. This woke me up to the many different ways of cooking with pineapple. I had never before thought of it in the same light as a tomato, but tossed in this simple salsa, its sweetness and acidity work remarkably well with the caramelised, fatty pork.
