I used to make all kinds of pasta but have developed celiac and IBS. I can not tolerate xanthan gum or the fiber in chickpea flour and am eating only low-FODMAP foods without polysaccharides. The only pasta I have made since the diet restrictions is made of oat flour but it is a bit weird and gummy. Have any of you had success making pasta without gum or chickpea flour? What is your recipe please? Thank you.
